Time for Some Fruit Kheer Recipes

Desserts generally served after a meal but we can’t deny the fact that we all love a bowl full of sweetness anytime! Keeping a synch to this festive season let’s catch up with these two out-of-box kheer recipes. These healthy and at the same time delicious festive recipes will drool over your mind.  Serve them as after-the-meal sweet-dish as a part of a traditional platter, or stock up some, for the guests who like to arrive without a notice and you’re ready for the festivals!

Custard Apple Kheer

Ingredients

  • 2 liters Purabi milk
  • 3/4 th cup basmati rice, washed and soaked
  • 1 1/2 cup powdered sugar
  • 2 large custard apples (sharifa/sitafal), deseeded
  • A handful of raisins
  • A handful of cashew nuts, roughly chopped
  • A handful of almonds, roughly chopped
  • 2-3 green cardamoms, ground to a powder

Recipe:

  • Bring the milk to a boil in a thick bottomed pan, by covering and cooking it on a high flame for about 10-15 minutes.
  • Uncover the pan and reduce the milk by 10 to 15 percent by letting it simmer for 10 minutes.
  • Add the washed and soaked basmati rice. Cover the pan and let the milk come up to a boil.
  • Let the rice cook for 20 minutes on simmer, till it thickens.
  • Stir in the sugar and let the kheer cook on a gentle heat until the sugar dissolves, for 5 minutes.
  • Next, add in the raisins, cashew nuts, almonds, and powdered cardamom. Mix well.
  • Add in the deseeded sharifa, stir and take off the flame after 30 seconds.
  • Serve hot or cold!

Apple Rabdi

Ingredients

  • 3 Medium Apples
  • 1 Litre Purabi Milk
  • 4 Tbsp Sugar
  • 1/4 tsp Green cardamoms
  • 8-10 Almonds (blanched), sliced
  • 8-10 Pistachios (blanched), sliced

Recipe

  • Pour milk in a broad vessel and bring to a boil. Simmer till reduced to half the original quantity.
  • Add sugar and cook on low heat, stirring continuously.
  • Peel and grate two apples. Add the grated apples to reduced milk and mix.
  • Cook for three to four minutes. Add cardamom powder, almonds and pistachios.
  • Pour into a serving dish. Thinly slice the remaining apple. Arrange the slices all around the dish. Serve hot or cold.

Fresh Fruit Rabri

Ingredients

  • Purabi Milk 1 liter
  • Sugar 1/2 cup or less
  • Cardamom powder 2 pinch
  • Kiwi ½ cup
  • Orange(pieces) ¼ cup
  • Apple(pieces) ½ cup
  • Banana(pieces) ¼ cup

Recipe

  • Boil 1 liter milk until it is reduced to ½ liter comes to thick consistency.
  • Add sugar and boil again until it is thick.
  • Add cardamom powder and mix it, switch off flame, later transfer into a bowl and allow it cool.
  • Place in refrigerator until it is chilled.
  • Remove apple peel and cut into pieces and place in water.
  • Take a bowl, add kiwi, orange, apple, banana and on its top pour this rabri mixture and mix nicely.
  • Serve chilled.

Tip: You can add khoya if want a thick consistency.
