Paneer Pasanda

Ingredients:

  • Purabi Paneer (cottage cheese): 2 cups
  • Ghee: 2 tbsp  
  • Refined Oil: 1 Tbsp
  • Garam masala (powder): 1 tsp
  • Purabi Cream: 1/2 Tbsp
  • Purabi Milk: 1 cup
  • Salt: as per taste
  • Sugar: a pinch
  • Cumin (whole): 1/2 tsp
  • Bayleaf: 1 -2
  • Freshly grounded black pepper: 1/2 tsp

Make a smooth paste with:

  • Onion: 1 cup (roughly chopped)
  • Cashew nuts (soaked): 1 Tbsp
  • Garlic Cloves: 6

Method:  

  • Heat a pan with little amount of oil and fry the paneer cubes and keep aside
  • Heat ghee in a kadhai, add cumin or jeera and bayleaf. Let them splutter.
  • Now add the onion-garlic-cashew paste and sauté on a medium flame for 2 minutes.
  • Cook until the raw smell disappears. Now add salt and garam masala and mix.
  • After a minute or two add on milk and sugar and continue cooking on medium heat.
  • Add 2 tbsp of water and stir. Wait for about 3/5 minutes and add paneer cubes, mix gently and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  • Now add pepper and finally the cream. Mix well and remove from the heat.
  • Serve hot.
